विश्व मे सबसे ज्यादा अगर किसी मेहमान नवाजी की बात होती है तो वो है भारतीय मेहमान नवाजी । आज भारतीयों को सभी प्रकार के मसालों की खोज के लिए जाना जाता है । पंजाबी और दक्षिण भारतीय खाने के बाद गुजराती खाना भारत मे बहुत पसंद किया जाता है ।
गुजरात का गुजराती खाना पश्चिमी भारत के खाने जैसा ही है । एक गुजराती थाली मे फरसन, रोटी, सब्जी और चावल होता है । यहाँ का जायका खट्टे, मीठे , और तीखे का संयोजन होता है । खाने का जायका खाना बनाने वाले पर भी निर्भर करता है और इस पर भी कि वो गुजरात मे कहाँ रहता है । गुजरात का प्रत्येक क्षेत्र चाहे वो उत्तरी गुजरात, कच्छ, कठियावाड़ा या द्क्षिणी गुजरात हो, अपने अनोखे स्वाद और पकवान के लिए प्रसिद्ध है।
ये हैं गुजरात के 10 सबसे बेहतरीन व्यंजन –
1॰ उनधियु –
उंधियू कई प्रकार की सब्जियों को मिला कर और ढेर सारे मसाले डालकर बनाई हुई, एकदम अलग, बहुत ही स्वादिष्ट सब्जी है जो अधिकतर सर्दियों के दिनों में बनाई जाती है. उनधियु को गुजरती मकर संक्रांति को जलेबी और पूरी के साथ खाते है ।
2 ॰ हांडवो-
हांडवो स्वादिष्ट गुजराती खाना है. ये दाल, चावल और सब्जियों को मिला कर बनाई जाती है, तो हम कह सकते है, कि इसमें प्रोटीन्स और विटेमिन्स भरपूर हैं.
3 ॰ सुरती लोचो–
कम तेल से बना, भाप में पका, मसाले दार देशी चटनी, मिर्च और सेव के साथ परोसा जाने वाला खास गुजराती पारम्परिक स्ट्रीट फूड सुरती लोचो का कोई जबाब नहीं. सुबह या शाम, आप जब चाहे इसे चटखारे लेकर खा सकते हैं।
4 ॰ खान्डवी –
यह शाम के समय का सबसे अच्छा स्नैक्स होता है । यह बेसन और दही के मिश्रण से छोटे छोटे रोल के आकार का बना होता है जो खाते ही मुँह मे घुल जाता है ।
5॰ खमन–
खमन खाने में बड़ा ही स्वादिष्ट होता हैं, इसे भाप में पकाने के कारण तेल तो बहुत ही कम प्रयोग होता है. यदि आप तेल से बनी चीजों से परेहज करते हों तो इसे अवश्य बनाईये.।
6 ॰ ढोकला –
यह भी भाप मे पका हुआ पिसी हुई दाल और चावल का मिश्रण होता है और इसे सरसों के दाने और करी पत्ता से सजाया जाता है । आज ढोकले के कई प्रकार बाजार मे उपलब्ध हैं जैसे- रवा ढोकला , बेसन ढोकला ,खट्टा ढोकला आदि ।
7 ॰ थेपला –
गुजराती थेपला अनेक तरह से बनाये जाते हैं. बेसन और गैंहू के आटे को मैंथी और देशी मसाले मिलाकर मेथी के मिस्से थेपला बनाते हैं . ये गुजरातियों का सबसे पसंदीदा नाश्ता होता है जिसे वो अदरक की चाय के साथ एंजॉय करते हैं ।
8 . मुठिया –
कम तेल खाने वालों के लिए ये सबसे अच्छा नाश्ता है । ये बच्चों के टिफिन के लिए अच्छा लंच बॉक्स होता है ।
9 ॰ फाफड़ा –
फाफड़ा गुजरात की गलियों का पकवान है ।इसका सबसे अच्छा स्वाद कढ़ी ,तली हुई हरी मिर्च और कच्चे पपीते की चटनी के साथ आता है ।
10 ॰ खीचू –
यह सबसे ज्यादा स्वस्थकारी और जल्दी से बनने वाला स्नेक है । यह चावल के आटा और मसालों का संयोजन है जो गरम पानी मे पकाया जाता है तथा इसमे तेल और लाल मिर्च का तड़का लगाकर खाया जाता है।
